# How To Make:

01 - Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion, bell pepper, and celery. Sauté for 5 to 6 minutes until softened.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Add smoked paprika, dried thyme, oregano, cumin, cayenne pepper, black pepper, and sea salt. Stir well to coat the vegetables evenly in the spices.
04 - Pour in the drained black-eyed peas, vegetable broth, soy sauce, and add bay leaves. Stir thoroughly to combine all ingredients.
05 - Bring to a gentle simmer, reduce heat to low, and cook uncovered for 20 to 25 minutes, stirring occasionally, until the mixture thickens and flavors meld.
06 - Remove and discard bay leaves. Taste and adjust seasoning if needed.
07 - Spoon the mixture over warm cooked rice. Garnish with fresh parsley or cilantro, sliced green onions, and a squeeze of lemon if desired.
